CELERY AND DRIED SHRIMP SALAD 
1 bunch celery (about 1 lb.)
20 to 30 med. to lg. dried shrimp
1 tbsp. Chinese rice wine or sake
2 tbsp. warm water
1 tsp. soy sauce
1/2 tsp. salt
1 tbsp. sugar
1 tbsp. white vinegar
2 tsp. sesame oil

Remove celery leaves, cut stalks lengthwise in half, then crosswise into 1 inch pieces. Wash shrimp under cold running water, then place in a bowl adding wine and warm water. Let stand for 30 minutes. In a large bowl, combine shrimp, soy sauce, salt, sugar, vinegar and sesame oil. Stir until sugar dissolves. Add celery and toss until coated with the dressing. Chill for one hour before serving.
