IMITATION ENCHILADAS | |
3 (15 oz.) cans hominy 5 tbsp. grease from chopped bacon 3 tbsp. chili powder, more or less to taste 2 tbsp. flour 1 c. finely chopped onion 1 c. grated cheese 1/2 tsp. salt Drain and reserve liquid from hominy. Place in skillet or saucepan. Add enough liquid from hominy to barely cover. Blend chili powder and flour with enough of liquid to mix well. Add bacon and salt to hominy. Boil until thick like gravy. Put in greased baking dish, cover with grated cheese and onion. Bake in 400 degree oven for 5 minutes or longer (until cheese is melted). |
