OLD FASHIONED CHICKEN AND
DUMPLINGS
 
3 lbs. chicken
1/4 c. oil
5 c. chicken broth
Flour

Cut chicken into serving pieces, roll in flour and brown in hot oil, drain off oil. Add enough broth to cover. Simmer 1 to 1 1/2 hours. When it is done, remove chicken and cook dumplings in liquid.

DUMPLINGS:

1 c. flour
1 egg
1/3 c. milk
2 1/2 tsp. baking powder

Sift flour and baking powder together. Beat egg well. Add milk and mix with dry ingredients. Drop by small spoonfuls into broth. Cover and cook 20 minutes over medium heat. Keep lid on while cooking if steam escapes dumplings will not be light. Add chicken and cook together for about 15 to 20 minutes.
