SAUSAGE AND RICE CASSEROLE 
2 lbs. hot or mild bulk sausage
1 chopped bell pepper
2 1/2 c. chopped celery
1 c. chopped onion
Sm. amount of butter
1 box (both pkgs.) Lipton chicken noodle soup
4 c. boiling water
1/2 tsp. salt
1 c. rice

Brown sausage; drain off fat. Saute bell pepper, celery, and onion in butter. Mix soup, boiling water, salt, and rice. Cook until rice is done. Mix all together in casserole and cover with slivered almonds (optional). Bake 20 minutes at 350 degrees.
