BRUSSEL SPROUTS SUPREME 
1 lb. brussel sprouts, trimmed and halved
5 strips bacon
1 tbsp. butter
1 med. yellow onion, chopped
2 sm. tomatoes, seeded and diced
Salt and black pepper to taste
Sour cream

Steam sprouts until tender; set aside. Cook bacon until crisp; drain, reserving 2 tablespoons drippings. Remove bacon from pan. Add butter and onion to drippings in pan; cook until onion is transparent. Crumble bacon and add to onion. Stir in tomatoes. Add salt and pepper. Warm brussel sprouts in mixture. Serve. Pass sour cream to spoon over sprouts.
