BANANA CREAM PIE 
3/4 c. sugar
1/3 c. all-purpose flour
1/4 tsp. salt
2 c. milk
3 egg yolks
1 tbsp. butter
1 tsp. vanilla
2 or 3 ripe bananas, sliced
1 baked pie shell

Mix sugar, flour and salt in pan; add 1 cup milk; mix smooth. Bring to a boil over medium heat, stirring constantly. Continue to stir and let boil until smoothly thickened, about 2 minutes. Remove from heat. Beat eggs with fork and add remaining milk; gradually stir into hot mixture. Place back on heat and bring to a boil, stirring and boil until mixture thickens again. Remove from heat, stir in butter and vanilla; cover and cool. Place sliced bananas in bottom of pastry shell, pour in filling. Top with whipped cream or meringue.
