BAKED TUNA LOAF WITH CUCUMBER
SAUCE
 
2 (6 1/2 or 7 oz.) cans tuna packed in water, drained
3/4 c. finely chopped celery
3/4 c. Quaker Oats (quick or old fashioned), uncooked
1/2 c. skim milk
1/4 c. egg substitute or 1 egg
1/8 tsp. pepper
Cucumber Sauce

Heat oven to 350 degrees. Coat 8 x 4 inch loaf pan with vegetable oil cooking spray or oil lightly. Flake tuna; add remaining ingredients, mixing well. Pat into prepared pan. Bake 40 minutes; let stand 5 minutes before slicing. Serve warm or cold with Cucumber Sauce. 8 servings.

CUCUMBER SAUCE:

1 (8 oz.) container (1 c.) plain yogurt
1/2 med. cucumber, finely chopped
2 tbsp. chopped fresh dill or 1 tsp. dried dill weed
1 tsp. minced onion

In small bowl, combine all ingredients; mix well. Chill. 1 1/3 cups.
