OAT BRAN MUFFINS 
2 1/2 c. oat bran
1/4 c. brown sugar
1 1/4 tsp. cinnamon
1 tbsp. baking powder
1/4 c. chopped nuts and/or raisins
1/2 c. skim milk
3/4 c. (6 oz.) fresh apple juice
2 egg whites
2 tbsp. vegetable oil
1 med. chopped apples or dates and orange rind

Mix in blender the skim milk, apple juice, egg whites, and vegetable oil. In mixing bowl, mix all dry ingredients with the milk and apple juice mixture. Add nuts and chopped apples. Mix. Bake at 425 degrees for 17 minutes. Yields: 12 muffins
