WHITE CHILI | |
1 lb. Great Northern Beans 6 c. water 6 c. chicken broth (1/2 tsp. salt) 1 lg. onion, chopped (1 cup) 2 cloves garlic, minced 2 (4 oz.) cans green chilies, chopped 1/2 tbsp. crushed oregano leaves 1 tsp. comino 1/2 tsp. red pepper 1/2 tsp. salt 1/2 tsp. black or white pepper 4 c. chopped, cooked chicken 1/2 c. shredded Monterey Jack cheese (optional) Bring beans and water to a boil, and simmer for two minutes. Remove from heat and cover and soak one hour (or overnight). Drain water. Combine beans, broth, onions, chilies, and seasonings. Bring to boil and simmer covered for one hour. Stir in chicken and cook 1/2 to 1 hour more. Just before serving, stir in cheese, if desired. Serve with cornbread. |
