VIENNA GOURMET COUNTRY STYLE RIBS | |
4 lg. pork country style ribs (or 6 sm.) Prepare mustard Salt Pepper Paprika Onion Rub each piece of meat on all sides with prepared mustard. Sprinkle with salt, pepper, and paprika. Brown well on all sides in a pressure cooker or Dutch oven. (Use small amount butter.) Add 1 large sliced onion and 1 cup or so of water. Cover and cook in pressure cooker 15 minutes at 15 pounds pressure. Let pressure drop of its own accord. (Or cook slowly in Dutch oven 1 - 1 1/2 hours until very tender; thicken gravy slightly, use a little flour or cornstarch dissolved in water.) Serve over cooked rice. Serves 4. |

I used basic yellow mustard. I was very generous with the paprika. I also used a variety of peppers; fresh ground black, crushed red and isot (a Turkish pepper). I browned in a large saute pan as my pressure cooker has a small bottom.
