PACIFIC LIME MOLD 
1 c. boiling water
1 pkg. lime gelatin
1 (9 oz.) can crushed pineapple, drained
Juice from crushed pineapple
1 c. cottage cheese
1 tsp. horseradish
1/4 c. chopped nuts
1/2 c. mayonnaise or 1/2 c. heavy cream, whipped

Dissolve gelatin in water. Add pineapple juice. Chill until slightly thickened. Beat until frothy. Fold in remaining ingredients, whipped cream last. Chill until set. Serves 6. This is also good made with orange gelatin instead of lime.
