LIME GELATIN MOLD WITH CASHEWS 
1 (3 oz.) pkg. lime gelatin
1 (3 oz.) pkg. lemon gelatin
1 lg. can crushed pineapple
1 sm. can evaporated milk
1 c. mayonnaise
1 c. lg. curd cottage cheese
Green food coloring (optional)
1 c. chopped cashews (or pecans)

Drain can of pineapple, reserving liquid. Add water to pineapple juice to equal 1 cup. Heat to boiling. Add lime and lemon gelatins. Stir until dissolved. Set aside.

Slowly add mayonnaise to milk until well mixed. Add cottage cheese and crushed pineapple, then combine with gelatin mixture. Add a drop or two of green food coloring, if desired. Add nuts, stir and pour into a salad mold. Refrigerate until firm.
