SEAFOOD GUMBO 
6 lbs. raw seafood (shrimp and crab)
1 1/2 c. melted fat
2 1/2 qts. sliced okra
3 c. chopped green onions
6 cloves garlic
4 tbsp. salt
1 tbsp. pepper
3 qts. hot water
6 c. canned tomatoes
6 whole bay leaves
3 tbsp. pepper sauce
9 c. cooked rice

Peel and devein shrimp or seafood you are using. Place fat in large frying pan. When melted add okra and saute 10 minutes or until somewhat dry. Stirring constantly add onions, garlic, salt, pepper and seafood. Cook 5 minutes. Add water, tomatoes, rice and remaining ingredients. Simmer for 10 minutes. Serve hot. Serves 36.
