BANANA BREAD 
2 med. ripe bananas
3/4 c. brown sugar, packed
1/2 c. butter, softened
1 egg
1/4 c. sour cream
1 tsp. vanilla
2 1/4 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1 c. chopped walnuts

Slice bananas into blender, whir until pureed (1 cup). Beat sugar and butter until light and fluffy. Beat in egg. Beat in banana, sour cream and vanilla until blended. Combine flour, baking powder, soda, salt and cinnamon. Add to banana mixture. Beat until blended. Stir in nuts. Pour into 9 x 5 inch loaf pan. Bake in 350 degree oven 65 to 70 minutes until toothpick inserted comes out clean. Cool in pan 10 minutes. Invert on wire rack to cool completely. Makes 1 loaf.
