COLD RICE OR BULGAR WHEAT SALAD 
5 c. cooked and cooled rice or bulgar wheat
1 c. chopped celery
1 c. chopped green pepper
1 c. pimento (fresh if possible)
1 c. chopped green onion
1 c. chopped nuts (optional)

DRESSING:

1 jar marinated artichokes, drain and save juice, chopped into sm. pieces
2 c. mayonnaise
Artichoke marinate juice
1 tsp. curry powder
Salt and pepper

Mix ingredients well and add whole mixture and chopped artichokes to rice or bulgar wheat. Garnish with sprigs of parsley or sprinkle with paprika.

Delicious, everyone enjoyed. I added chopped cucumber, Kalamata olives and Feta cheese. Will probably substitute Greek yogart for a portion of mayo when I make this again.
