OATMEAL - NUT COOKIES 
1 1/2 c. flour, sifted
1 tsp. baking soda
1 tsp. salt
1 c. shortening
3/4 c. granulated sugar
3/4 c. brown sugar
2 eggs
1 tsp. vanilla
2 c. oatmeal
1/2 c. nuts, chopped

Start oven at 375 degrees and grease cookie sheets. Sift flour, soda and salt. (I skip this step.) Cream shortening; add sugars; work until smooth. Beat in eggs and vanilla. Stir in flour and nuts. Drop on cookie sheets 1 inch apart. Bake 10 minutes or until golden brown. Remove and cool. Makes 75 (or more).
