MOTHER'S HAM LOAF
1 lb. ground ham
2 lb. lean ground pork (I sometimes use ground chicken)
1 c. fine bread crumbs
1 c. milk
2 eggs (can use equivalent artificial egg or 3 egg whites)
1/3 c. green bell pepper (ground or minced)

Combine all ingredients thoroughly. Line the bottom of a large bread pan with double layer of waxed paper. Lightly pack the ham loaf mixture into the pan. Cover the pan with foil. Set pan into another pan holding water enough to come half way up the sides of meat pan. Bake at 350 degrees for about 1 hour or until if feels firm to touch in the center. Cool slightly and turn out to slice and serve. It can be covered with crushed pineapple and brown sugar, dot with butter, browned 5 minutes under broiler. It is very good served in cold slice too.
