CHOCOLATE FUDGE 
1/4 c. water
1 sq. unsweetened chocolate
1/8 tsp. cinnamon
3/4 c. Diabetic sweetener
1/2 c. skim milk
1/2 tsp. vanilla
1 envelope unflavored gelatin

Soften gelatin in water for 5 minutes. Melt 1 square chocolate, cinnamon and sweetener; slowly add skim milk. Slowly add 1/2 cup water, stir. Add gelatin; stir. Remove from heat, add vanilla. Rinse small pan with cold water. Pour in mixture. Refrigerate.
