APPLE WALNUT CAKE 
4 c. coarsely chopped tart apples
2 c. sugar
2 eggs
1/2 c. vegetable oil
2 tsp. vanilla
2 c. sifted flour
1 1/2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 c. chopped walnuts

Combine apple and sugar; let stand. Beat eggs slightly, beat in oil and vanilla. Mix and sift all dry ingredients. Stir egg mixture and dry ingredients alternately into apple-sugar mix. Stir in walnuts. Pour into greased and floured 9x13 inch oblong pan. Bake 1 hour at 350 degrees or until cake tests done. Let stand in pan until cool. Frost with lemon-butter icing.
