OLD FASHIONED JELLY ROLL 
Cake:

3/4 cup sifted flour
1/4 teaspoon salt
3/4 teaspoon baking powder
4 eggs
3/4 cup sugar
1 teaspoon vanilla

Beat eggs until foamy: Gradually add sugar and continue beating until mixture is thick. Gradually fold in dry ingredients (which have been mixed together). Add vanilla. Line a 15 X 10 X 1 inch jello roll pan with waxed paper. Grease wax paper and sides of pan. Pour batter into pan and bake in hot oven at 400°F for 13 minutes. Turn cake out on cloth which has been sprinkled with powered sugar. Remove paper, roll up cake in cloth. Cool.

Filling:

1 pkg jello - lemon pudding and pie filling
1/2 cup coconut

Prepare according to package. Cool. Add 1/2 cup coconut. Spread on unrolled cake, roll up again. Serve with cool whip.

Note: You can also add 2 tablespoons cocoa to flour mixture - then fill with ice cream and freeze.
