HEARTY POTATO SALAD | |
2 lbs. potatoes, cooked, peeled and diced 1/2 c. celery, chopped 1/2 c. onion, chopped 2 hard cooked eggs, chopped 8 slices bacon, cooked & crumbled 1/3 c. Hellman's mayonnaise 1/3 c. sour cream 2 tbsp. tarragon vinegar Salt & pepper to taste Combine first 5 ingredients. Set aside. Mix together last 4 ingredients for dressing. Pour dressing over potato mixture. Toss. Garnish with parsley. Refrigerate. Serves 6 to 8. |
