BAKED GERMAN PANCAKE 
3 eggs
1/2 tsp. salt
2 tbsp. melted butter
Lemon wedges, powdered sugar, melted butter
1/2 c. all purpose flour
1/2 c. milk

Using a French whip or fork, beat eggs until blended. Sift flour; measure, and sift again with salt. Add flour and salt to eggs in 4 additions, beating after each addition, just until mixture is smooth. Add milk in 2 additions, beating slightly after each. Lightly beat in melted butter.

Generously butter bottom and sides of unheated 9 or 10 inch heavy frying pan. Pour batter into frying pan and bake in a 450 degree oven for 20 minutes. Reduce oven temperature to 350 degrees and bake 10 minutes more. Slip onto heated plate; serve immediately. Offer lemon wedges, powdered sugar, and melted butter. Makes 2 to 3 servings.
