ZUCCHINI FRITTATA 
6 zucchini
3 eggs
1/2 c. bread crumbs
1/2 tsp. oregano
1/4 c. parsley, chopped
1 clove garlic, mashed
1/2 c. Swiss cheese, grated
1/4 c. grated Parmesan cheese

Slice zucchini, and cook until soft. Mash the cooked zucchini. Beat the eggs. Add the zucchini and the other ingredients to the eggs. Preheat oven to 350 degrees and bake for 30 to 40 minutes.
