ZUCCHINI FRITTATA | |
2 1/2 to 3 c. sliced zucchini, unpeeled 1 c. cooked mild Italian or German sausage, cut in sm. pieces 1 c. grated cheddar cheese 3 lg. eggs, beaten 2 rounding tbsp. butter butter Melt butter in 8 inch non-stick skillet over medium heat. Add sliced zucchini. Sprinkle onion powder and barbecue spice over zucchini. Cover and let simmer until partly done, stirring lightly occasionally. Add cut up sausage. Let heat through. Sprinkle cheese over mixture. Cover again and let cook only until cheese is melted. Stir lightly. Beat eggs and pour over mixture. Let beaten eggs also flow some under rest of mixture. Cover and let cook until eggs are cooked and set. Using a wide spatula, turn half of cooked mixture over other half as you would an omelet. Should be lightly browned on bottom. Serves 2 to 3 people. |
