WHOLE WHEAT MUFFINS | |
2 c. unsifted whole wheat flour 1 tsp. baking soda 1/2 tsp. salt 1/2 c. raisins 4 tbsp. sugar 1 egg, well beaten 1 1/2 c. sour or buttermilk 3 tbsp. shortening, melted Combine flour, baking soda, salt and sugar; mix well. Combine eggs, milk and shortening. Add to flour, stirring only enough to blend. Add raisin. Turn into greased muffin tins. Bake in hot oven (425 degrees) for 20 to 25 minutes. Makes 12 muffins. |
