5 bunches of parsley, picked, washed, chopped 1/2 c. burghul (crushed wheat), found at Lebanese bakery 5 med. tomatoes, diced 1 bunch finely chopped scallion 1 sm. finely chopped onion 1 tbsp. crushed mint flakes 1 tsp. allspice 1 tsp. salt 1 c. lemon juice 1/2 c. olive oil Pick the parsley, wash and spread on a paper towel until dry (usual overnight). Chop in food processor a little at a time for 3 seconds. Soak the burghul for 10 minutes and drain. Add the parsley, tomatoes, scallion, mint and other ingredients; mix well. Serves 5 to 6. Serve with Romaine lettuce or Iceberg lettuce. "Sahtain", which means eat with good health. |
