ZERO CHOLESTEROL HOLLANDAISE
SAUCE
 
1/3 c. egg substitute (i.e., Egg Beaters, etc.)
2 tbsp. fresh lemon juice
Pinch of cayenne pepper
1/3 c. margarine

Put egg substitute, lemon juice and cayenne pepper into blender or food processor. Blend. Put margarine in 1 cup glass measure. Cover and microwave on high for 1 1/2 minutes until boiling. Turn on blender and pour butter through lid. Sauce should thicken slightly. To reheat sauce, microwave for 10 seconds.

Since microwave ovens vary in power, you may need to adjust your cooking time.
