LIGHTER POUND CAKE 
2 1/4 c. flour
3/4 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/8 tsp. ground mace
1/2 c. corn oil butter
1 c. sugar
3 egg whites
1 1/2 tsp. vanilla extract
3/4 c. buttermilk

Preheat oven to 350 degrees. In a medium mixing bowl, combine flour, baking powder, baking soda, salt, and mace; mix well. In a separate bowl, cream butter and sugar until smooth. Add egg whites and vanilla and blend until smooth. Alternately add flour mixture and buttermilk in 2 additions each, blending well after each addition. Spoon batter into standard 8 1/2 x 4 1/2 inch loaf pan that has been sprayed with non-stick spray. Bake for 1 hour. Remove and cool.
