CORNMEAL COOKIES | |
3 cups butter 3 cups sugar 4 eggs 6 cups all-purpose flour 2 cups cornmeal 1 tbsp. baking powder + 1 tsp. baking powder 1 tsp. salt 1 tbsp. vanilla + 1 tsp. vanilla 4 cups raisins Preheat oven to 350°F. Mix butter and sugar in mixing bowl. Add eggs and beat well. Mix flour, cornmeal, baking powder, salt and vanilla together. Add ingredients to mixture. Put raisins in dough last. Use a Number 40 spring scoop and put dough on a greased 18x26-inch pan. Bake at 350°F for about 12 minutes in conventional oven or 325°F for about 12 minutes in convection oven, until lightly browned. Makes about 100 cookies. Recipe may be halved. |
