CHOCOLATE CORNMEAL COOKIES 
1 c. butter
1/2 c. brown sugar
1/2 c. granulated sugar
1 egg, beaten with 1/4 c. milk or sm. can vanilla pudding
1 1/2 c. flour
1/2 c. cornmeal
1/4 c. cocoa
1 tsp. baking powder
1/4 tsp. salt
1/2 c. raisins
1/2 c. nuts

Cream butter and sugars. Add beaten eggs with milk or pudding and vanilla. Add rest of ingredients and mix well. Drop by spoonfuls on greased cookie sheets. Bake at 350 degrees for 15 minutes or until brown.

These are pretty good. I changed a few things though. I used margerine instead of butter, and I used dried cranberries instead of raisins. For the nuts, I used sliced almonds.

I wanted this to have a bit more fiber. Oatmeal sounded like it would be a nice addition, as well. Therefore I used 3/4 cup whole wheat flour and 1 cup oats. I also subbed coconut oil for butter. Had a tablespoon of butter and the rest was coconut oil--pure, so it stays more solid. I left out the milk. They came out very tasty, slightly crunchy. Left out the nuts. Very nice breakfast cookie. I thought the batter looked a bit wet before I cooked it, so added a bit more flour. Probably would not next time. If I were to add nuts, I think I would do finely ground, to stay with the texture. Husband voted yes!! Will do more in the future!
