CORNMEAL COOKIES 
1 c. shortening
1 1/2 c. sugar
2 eggs
1 tsp. vanilla
3 c. sifted flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp. nutmeg
1 c. cornmeal
1/2 c. raisins, optional

Cream together shortening and sugar. Add eggs and vanilla. Beat until light and fluffy. Sift together dry ingredients. Add to creamed mixture. Add raisins. Roll 1/4 inch thick on lightly floured board. Cut. Doughnut cutter may be used. Bake on greased cookie sheet 8-10 minutes at 400 degrees. Makes 4 dozen.
