CORNMEAL COOKIES 
3/4 c. butter
1 egg
1/2 c. cornmeal
1/4 tsp. salt
3/4 c. sugar
1 1/2 c. flour
1 tsp. baking powder
1 tsp. vanilla

Mix all together and drop by teaspoons full on greased baking sheet. Bake for 15 minutes in 350 degree oven.

CHOCOLATE CORNMEAL COOKIES:

Add to above 1/4 cup cocoa and 1/4 cup milk.

I tried this recipe as is, then added 1/2 cup shaved, young coconut meat and a marachino cherry on top at my wife's suggestion. Now, I can't make enough of them! We own a small restaurant and I bake cookies to put in the display case. This is the new favorite even over my chocolate/cherry pinwheels and my great-grandmother's molasses cookies! I also doubled the recipe.I think I may have to double it again!

I made this recipe exactly as described but found I had to lessen my cook time so they wouldn't over brown on the bottom. I will definitely make these again!!!
