PRUNE CAKE | |
2 c. sugar 1 c. Wesson oil 3 eggs Vanilla 2 c. sifted cake flour 1/2 tsp. salt 1 tsp. baking soda 1 tsp. nutmeg 1 tsp. allspice 1 tsp. cinnamon 1 c. buttermilk 1 c. chopped nuts 1 c. cooked prunes (pitted) 1. Blend sugar and oil 2. Add eggs one at a time and mix well. 3. Add vanilla. 4. Sift flour, soda, spice and salt. 5. Add to egg mixture alternately with buttermilk. 6. Add nuts and prunes. 7. Pour in greased pans. 8. Bake 1 hour 15 minutes in 11x8 pans at 325 degrees. Bake 20-30 minutes in 3 layers. ICING: 1 c. sugar 1/2 c. buttermilk 1/2 tsp. baking soda 1 tbsp. light corn syrup 1/4 c. nuts 1/2 tsp. vanilla Mix all ingredients in a deep pan, otherwise it will boil over. Stir over low heat until sugar is dissolved. Continue cooking without stirring to soft ball stage without beating. Pour mixture over hot cake. Spread evenly. |
