BROILED SALMON WITH GINGER AND
PEPPER BUTTER
 
1 c. olive oil
1/4 c. shallots or green onion, sliced thin
1 tsp. grated lemon peel
6 (7 to 8 oz.) salmon fillets
2 tbsp. soy sauce
Black pepper
Ginger/Pepper Butter

Combine olive oil, soy sauce, shallots, lemon peel, and pepper to taste; mix well. Arrange fillets, skin side down. In a shallow glass dish, pour marinade over fillets and marinade for at least 3 hours or overnight. Turn several times. Remove salmon from marinade and arrange, skin side down, on broiler pan. Broil until the salmon is no longer translucent, about 5 to 10 minutes. Cooking time may vary depending on thickness of salmon. To serve, arrange fillets on dinner plated and top each with a large spoonful of Ginger/Pepper Butter.

GINGER/PEPPER BUTTER:

1/2 c. butter
1/4 tsp. salt
1/4 tsp. cayenne pepper
2 tbsp. fresh ginger, finely chopped
2 tsp. balsamic vinegar or red wine vinegar

Combine the ingredients at the bottom of the recipe together in a small bowl. I'd use softened/spreadable butter.
