EASTPORT SALAD | |
2 tbsp. olive or salad oil 1 clove garlic, sliced 2 tomatoes 1 lg. head Romaine lettuce 4 chopped green onions 1/4 cup Romano cheese 1/2 lb. bacon, fried and crumbled Place oil, garlic, and tomatoes in large bowl (wooden is best) and stir well. Do not stir again until serving time. Break lettuce into bowl and add onions, cheese, and bacon. Do not stir! Cover tightly and refrigerate for at least 2 hours. DRESSING: 1/3 cup olive or salad oil 2 tbsp. lemon juice 1/2 tsp. oregano Fresh ground pepper Combine dressing ingredients and chill. Pour over salad just before serving and toss. |
