GRANDMA'S TETU CHOCOLATE COOKIES | |
1 1/2 c. Spry (melted) shortening 3 eggs 1 orange 1 tsp. orange juice and grated rind 1 tsp. vanilla 4 c. sifted flour 1 1/2 tbsp. liquid coffee 4 tsp. baking powder 5 tbsp. Hershey's cocoa Large pinch of salt 2 1/2 tsp. cinnamon 2 tsp. cloves 2 tsp. nutmeg 1/2 c. chopped walnuts Sift all dry ingredients (except nuts) together. Add shortening, coffee, orange juice, grated rind, vanilla and eggs (slightly beaten). Add nuts and mix well. Roll into balls (about 3/4 size of a golfball). Bake on ungreased pan until toothpick comes out clean. Bake at 375 to 400 degrees about 15 to 20 minutes. FROSTING: 2 egg whites, not beaten 1 1/2 lb. powdered sugar, sifted 1/2 to 1 lemon, juice and grated rind (to taste) Mix well all ingredients. Put baked cookies into mixture to coat thoroughly (gently so as not to break). Set on flat surface to cool. Note: These are Terri's all-time favorite cookies. These make great Christmas cookies. |
