WILD STIR FRY CHICKEN SKILLET | |
2 tbsp. oil 4 chicken fillets, cubed 2 c. water 1 pkg. UNCLE BEN'S® 5 minute wild rice 1/2 c. onion 1/2 tsp. salt 1/8 tsp. pepper 2 c. shredded lettuce 1 med. tomato, diced Heat oil in 10" skillet, add chicken, onions and cook, stirring frequently until firm and white. Add water, rice, seasoning package, salt and pepper. Stir and bring to a boil. Reduce heat, cover and simmer until water is absorbed (approximately 5 minutes). Stir in lettuce and tomato just before serving. Serves 4 and is a great quick dinner. Serve with bread or rolls. |
