WILD STIR-FRY CHICKEN SKILLET
(UNCLE BEN'S®)
 
2 tbsp. oil
4 breasts, boneless and cut into bite-size pieces
2 c. water
1 (6 1/2 oz.) pkg. UNCLE BEN'S® long grain and wild rice fast cooking and savory recipe
1/2 c. chopped onion
1/2 tsp. salt
1/8 tsp. pepper
2 c. shredded lettuce
1 med. tomato, chopped

Heat oil in 10 inch skillet at medium heat. Add chicken and cook until firm and white. Add water, rice and seasonings, onion, salt, pepper. Bring to boil. Reduce heat, cover and simmer until water is absorbed about 5 minutes. Stir in lettuce and tomato before serving. Yield: 6 servings
