WILD STIR-FRY CHICKEN SKILLET | |
2 tbsp. oil 4 chicken breast halves (cut into bite-size pieces) 2 c. water 1 pkg. (6 1/4 oz.) UNCLE BEN'S® Long Grain & Wild Rice Fast Cooking Savory Recipe 1/2 c. onion (chopped) 1/2 tsp. salt 1/8 tsp. pepper 2 c. lettuce (shredded) 1 med. tomato (chopped) Heat oil in skillet over medium-high heat. Add chicken and cook, stirring frequently, until firm and white. Add water, contents of rice and seasoning packets, onion, salt and pepper; stir. Bring to a boil. Reduce heat, cover and simmer until water is absorbed, about 5 minutes. Stir in lettuce and tomato just before serving. Serves 6. |
