STIR-FRY CHICKEN SKILLET 
2 tbsp. vegetable oil
4 chicken breast halves, skinned, boned & cut into bite-size pieces
2 c. water
1 (6 1/4 oz.) pkg. UNCLE BEN'S® long grain wild rice
1/2 c. onion, chopped
1/2 tsp. salt
1/8 tsp. black pepper
2 c. lettuce, shredded
1 med. tomato, chopped

Heat oil in 10-inch skillet over medium heat. Add chicken and cook, stirring frequently, until firm and white. Add water, contents of rice and seasoning packets, onion, salt and pepper; stir. Bring to boil. Reduce heat, cover and simmer until water is absorbed, about 5 minutes. Stir in lettuce and tomato just before serving. Makes 6 servings.
