CHEESE DELIGHT IN EVERY BITE
CHICKEN
 
3 whole broiler fryer chicken breasts, halved, boned, skinned
1/2 c. butter
1 clove garlic, pressed
1 c. fine dry bread crumbs
1/2 c. finely grated sharp cheddar cheese
1/4 c. finely grated Parmesan cheese
1 tsp. salt
1/8 tsp. pepper

Melt butter with garlic. Mix bread crumbs, cheeses, salt, and pepper. Dip breast pieces into butter and coat chicken pieces with crumb mixture. Place in large shallow baking pan (15 x 10 x 2). Tuck sides under to form neat roll.

Be sure that breast pieces don't touch each other. Pour remainder of butter over chicken pieces. Bake uncovered in 350 degree oven for 40-45 minutes or until tender and brown. Baste occasionally with pan juice if desired. Makes 6 servings.
