CUCUMBER RINGS 
2 gal. lg. cucumber rings, peeled & seeded
2 c. pickling lime
8 1/2 qts. water

Let stand in solution 24 hours. Drain and wash until water is clear. Cover with cold water and soak 3 hours (drain). Simmer 2 hours in:

1 c. vinegar
1 sm. bottle red food coloring
1 tbsp. alum
Water to cover

Drain. Make a syrup of:

2 c. vinegar
2 c. water
10 c. sugar
8 sticks cinnamon
1 pkg. red hots candy

Pour over cucumber rings and let stand overnight. Drain and reheat syrup for 3 days. Pack in jars and seal the third day.
