ZUCCHINI BREAD 
2 c. flour
1 tbsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
3 eggs
2 c. sugar
1 c. vegetable oil
1 tbsp. vanilla
3 c. grated zucchini
1/4 c. fresh grated lemon rind

Combine dry ingredients; set aside. Mix eggs and sugar; add oil and vanilla, then mix in dry ingredients a little at a time. Add zucchini and lemon rind. Flour and oil two bread pans.

Use standard loaf pans. Bake at 350 degrees for about 1 hour.
