CATHY'S ZUCCHINI BREAD 
2 c. sifted all purpose flour
2 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
3 tsp. ground cinnamon
3 eggs
1 c. vegetable oil
1 1/2 c. sugar
2 med. zucchini, grated (2 c.)
2 tsp. vanilla
1 c. raisins
1 c. chopped walnuts
1 tbsp. grated lemon peel

1. Sift flour, baking soda, salt, baking powder and cinnamon onto wax paper.

2. Combine eggs, oil, sugar, zucchini, vanilla and lemon peel in a large mixing bowl; beat until well mixed. Stir in the flour mixture until smooth.

3. Stir in raisins and nuts. Pour mixture into a greased 13"x9"x2" pan.

4. Bake in a moderate oven, 350 degrees, for 40 minutes or until center springs back when lightly pressed with finger tip. Cool in pan on wire rack.
