CHOCOLATE ZUCCHINI BREAD | |
2 c. flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. salt 1/2 c. cocoa 3 eggs 2 c. sugar 1/2 c. oil 3/4 c. buttermilk 2 c. shredded zucchini 1 c. nuts 1 tsp. vanilla 1 tsp. grated orange peel (or lemon peel) Combine wet ingredients; combine dry ingredients, mixing thoroughly. Pour wet ingredients into dry ingredients and mix well. Pour into three 7 1/2 x 4 inch loaf pans and bake in preheated 350 degree oven for approximately 45-50 minutes or until toothpick inserted in center comes out clean. When cool may be frosted with the following mixture, if desired: 3 oz. cream cheese 1/4 c. butter 2 c. powdered sugar 1 tsp. vanilla Enough milk to make it a good spreading consistency |
