ZUCCHINI BREAD #106 
1 1/2 c. all-purpose flour
1 c. whole wheat flour
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
3 eggs
2 c. packed brown sugar
2 c. finely shredded zucchini
3/4 c. cooking oil
2 tsp. lemon peel
1 tsp. vanilla
1 c. walnuts (optional)

Combine dry ingredients in a bowl and set aside. In a separate bowl beat the eggs. Add the brown sugar and zucchini; mix. Add oil, lemon peel and vanilla; mix until blended. Add flour mixture and mix. Fold in nuts.

Pour into 2 greased loaf pans (or 4 mini loaf pans). Bake at 350 degrees for 50 minutes or until a toothpick inserted comes out clean.
