1 c. shortening
2 c. brown sugar
2 eggs, beaten
1/4 c. hot water
1 c. coconut
4 1/2 c. flour
1/4 tsp. salt
1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla

Add baking soda to liquid and blend into creamed mixture. Add coconut and vanilla. Add dry ingredients. Mix well. Chill. Form into balls the size of walnuts. Flatten each ball with fingers into oblong shape, lengthwise, and with fork, make washboard design. Bake at 400 degrees for 8 to 10 minutes.
