APRICOT-NUT BREAD 
3 c. all-purpose flour
1 1/4 c. packed brown sugar
1 c. coarsely chopped salted mixed nuts
1 c. chopped dried apricots
1 tbsp. + 2 tsp. baking powder
1 tsp. salt
2 eggs
1 (8 oz.) container apricot yogurt
2/3 c. butter, melted
1/2 c. milk
2 tsp. vanilla

Grease and flour 9 x 5 inch loaf pan. Preheat oven to 350 degrees. In large bowl, mix together flour, sugar, nuts, apricots, baking powder and salt. In another bowl, beat eggs lightly. Stir in yogurt, butter, milk and vanilla. Make a well in flour mixture. Pour in egg and yogurt mixture; stir until combined. Pour into pan. Bake 1 hour and 15 minutes or until pick comes out clean and bread is golden. Cool on rack 10 minutes. Remove from pan and cool.
