LEMON COCONUT POUND CAKE 
3 sticks butter
3 c. sugar
3 c. flour
6 eggs
1/4 tsp. salt
1 tsp. baking powder
1 c. evaporated milk
2 tbsp. lemon juice
1 can flaked coconut

Cream butter and sugar. Add flour and eggs alternately. Add flour, salt and baking powder, beating constantly. Add milk and lemon juice. Beat. Fold in coconut. Bake at 325 degrees for 1 1/2 hours or until cake pulls from side of pan. Cook in tube pan. Always moist.
