SWEETHEART FUDGE PIE 
1/2 c. butter, softened
3/4 c. firmly packed brown sugar
3 eggs
1 (12 oz.) pkg. semi-sweet chocolate morsels, melted
2 tsp. instant coffee granules
1 tsp. rum extract
1/2 c. all-purpose flour
1 c. coarsely chopped walnuts
1 unbaked 9-inch pastry shell
Whipped cream (opt.)
Chopped walnuts (opt.)

Cream butter; gradually add brown sugar, beating at medium speed of an electric mixer until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Add melted chocolate, coffee granules, and rum extract; mix well. Stir in flour and 1 cup chopped walnuts.

Pour mixture into pastry shell. Bake at 375 degrees for 25 minutes; cool completely. Chill. Garnish with whipped cream and walnuts, if desired. Yield: 1 (9 inch) pie.
